Dancing Goat Distillery Limousin Rye Whiskey is uniquely aged with innovative barreling techniques utilizing three different types of vintage and new oak. Distillate initially rested in vintage American Oak for more subtle aging. New French Oak used sparingly to enhance the character of the whiskey. Blended in the custom made Solera finishing system with Limousin oak barrels for flavor and body. It offers forward notes of light vanilla and caramel finish with a swell of spice and warmth. Every batch is tested at multiple proof levels to discover the ultimate expression of the spirit. Bottle proof varies as each batch is bottled for maximum flavor.
